The Sant Josep City Council will put Ibiza’s gastronomic essence on full display at Madrid Fusión 2023, according to the Consistory in a press release. It will be achieved through “local products and forgotten methods and techniques that are being revived thanks to the work of many professionals and suppliers who are committed to local cuisine as a means of creating identity in the municipality”.

With this goal, the City Council of Sant Josep brings David Grussaute, chef from UNIC Restaurant located in Platja d’en Bossa, to Madrid Fusión which opens its doors today. David Grussaute is one of the “most avant-garde and creative chefs on the island who bases his gastronomic offering on zero kilometer products and respect for tradition.” “UNIC Restaurant represents a culinary experience where diners can discover part of the identity of the island through a cuisine that blends tradition and avant-garde,” the note says.

Conviction to local products and techniques at Madrid Fusión 2023

Grussaute assures that his commitment to local products and zero kilometer is a “conviction”, and to meet this goal he collaborates with small producers, farmers and fishing associations. In this way, “he can highlight products, techniques and methods from the island that are almost forgotten and brimming with nuances and flavors which surprise and captivate its public”.
