Discover the 3 Ibiza restaurants that retain their prestigious Michelin star for 2026

Ibiza retains three restaurants with Michelin star in the 2026 edition: La Gaia (Ibiza), Omakase by Walt (Ibiza) and Unic (Sant Josep). The island goes from five to three, leaving out Es Tragón (Sant Antoni) and Etxeko by Martín Berasategui (Santa Eulària), two projects that are not currently in operation.

In the first case, after announcing their closure at their usual location and a future move to a luxury hotel in Santa Eulària, with a date yet to be confirmed; in the second, due to the termination of the restaurant at the Bless Hotel in Cala Nova following a change in its gastronomic offer. When a restaurant is not operating, the guide withdraws the distinction until the project reopens and can be re-evaluated.

The three starred restaurants of Ibiza

La Gaia (Ibiza Gran Hotel, chef Óscar Molina). Signature cuisine with the “soul of the territory”: Ibizan produce from the sea and orchards, precise sauces and a narrative thread that highlights landscape, tradition and sustainability. Its tasting menus seek a balance between island heritage and contemporary technique, supported by impeccable service and a wine cellar that matches the experience.

Omakase by Walt (Ibiza, chef Walter Sidoravicius). An intimate Japanese haute cuisine bar where the chef leads a journey through bites — nigiri, raw cuts and seasonal preparations — based on classic Japanese technique and premium local ingredients (tuna, red mullet, lobster, llampuga…). The proposal carefully controls tempo and silence to focus the diner on the texture, temperature and umami of each piece.

Unic (Platja d’en Bossa, Sant Josep; chef David Grussaute). Personal creativity with a botanical perspective and nods to the Pitiusan recipe book. The chef builds dishes with meticulous work on sauces and stocks, combining sea, countryside and local memory in recognisable courses with delicate aesthetics and a contemporary reading of the island’s environment.

The president of the Government, Marga Prohens, congratulated the Balearic restaurants recognised by Michelin and stressed that the archipelago “is a land that the world looks to for its excellence and leadership”, adding that these awards “boost our tourism, cultural and quality model”. At the Málaga gala, the guide confirmed that there are no new three-starred restaurants, raised several restaurants to two stars and added new first stars, keeping the bar high for a diverse and demanding Spanish culinary scene.

The Málaga ceremony left a map without new three-starred restaurants, the elevation of several restaurants to the category of two stars and a large group of new first stars, consolidating the maturity and diversity of Spain’s culinary panorama.

With La Gaia, Omakase by Walt and Unic, Ibiza preserves a high-level trio that reinforces its image as a gastronomic destination with identity, respect for zero-kilometre produce and proposals capable of attracting an audience that seeks unique experiences throughout the year.
