From the moment guests are collected from the meeting point at the foot of the wall (by reservation), they begin to discover that the evening in store is going to be rather special. On arrival, there’s nothing like a vermouth to whet your appetite before moving into the restaurant.
In the kitchen, under the direction of executive chef José Miguel Bonet, is a team that is passionate about preparing the beautifully presented cuisine based on local produce. Kilometre-zero is a priority, and Corsario Restaurant works hand in hand with local producers to achieve that direct link with history through gastronomy.

Don’t miss the Ibizan prawn croquettes with sashimi and ají amarillo (yellow hot pepper) mayonnaise. Let yourself be seduced by the slow cooked Ibizan porc negre pork ribs with sweet potato purée or by the coca of roasted peppers, sardines and olives. A new addition, the smoked aubergine with pesto, tahini, hazelnuts and yuzu, is utterly exquisite. Not to mention the market-fresh fish, so present in the local cuisine and linked to the history of the island.

The restaurant’s own kitchen garden provides the aromatic herbs that play a major role in the dishes as well as all the colourful flowers that adorn the artisan vases. And, thanks to local producers such as the Ses Cabretes farm, they can make delicacies such as the iconic cheesecake, providing guests with a perfect ending to a perfect dinner.

But the evening isn’t over yet, the Corsario Restaurant & Terrace experience continues at El Club or on the incredible pool deck, where you can’t miss creations like Bloody Mary with Ibizan vodka and fresh rosemary picked from the kitchen garden, just one example of the establishment’s commitment to home-grown products.
